CHICKEN SATAY AND PEANUT SAUCE


marinade:
3 TB honey
4 TB oil
1/2 tsp ground coriander
1/4 tsp cayenne pepper
4 TB lemon juice
2 TB soy sauce

2 boneless, skinless chicken breast

peanut sauce:
2 cups milk
1/2 cup sweetend coconut
1 tsp chile flakes
1/2 tsp caraway seed
1/2 tsp ground ginger
1/2 tsp ground coriander
2 anchovies
4 cloves garlic, crushed
1/4 tsp salt
4 TB peanut butter
lemon or lime juice to taste

soak chicken in the marinade mixture for 2-3 hours. slice chicken into strips and string them onto skewers. ( if wooden skewers, soak for 30 minutes before hand).
